Game Day Potato Salad

If you are a part of the SEC nation one of the biggest games of the season is upon us. Alabama versus LSU. The build up that fans and the media give this game is insane. Two powerhouses meeting on the gridiron, and the outcome will determine each teams destiny. (I know destiny is an overused and a little dramatic term for football, but come up with a better word and I am all in.) Each team has stupid crazy talent, and they both match up across the board. I mean, Leonard Fournette, for the love he is good, but so is Alabama’s defense so it should be interesting. That last sentence could be the understatement of the year. And, while I am a huge Bammer, nothing beats the food served up on game day at LSU. We were there last year (see the post here) and I was in on the making of the potato salad.  In Louisiana they serve their gumbo on top of a bowl of potato salad.  Sounds weird I know, but the cool creamy potato salad is the perfect match to authentic Louisiana hot and spicy gumbo. This year in Tuscaloosa I will be a part of a tailgate serving up some amazing food made by Louisiana natives and I have been put in charge of the potato salad. While I could make my momma’s recipe I have decided to go with the recipe my BF from Baton Rouge let me help her with last year.  She got the recipe from her mom and none of us measure so this is our best guess.  Add more of what you like and take out what you don’t.  Enjoy and Roll Tide!

Nancy Pollard’s Potato Salad

5 lb bag of potatoes, peeled, chopped and boiled in salted water until tender
2 red bell peppers chopped
1 purple onion chopped
2 fresh jalapeños diced
1 cup celery diced
1 cup Wickles relish
1/2 cup Duke’s Mayo
1/4-1/2 cup mustard
3 boiled eggs mashed up into mayo/mustard
salt and pepper to taste
Tony Cachares to taste
Optional celery seed to taste

Mix all the ingredients together in a large bowl, cover and refrigerate overnight.
