Cucumber Rosemary Gimlet

I was trying to come up with a nice wholesome green juice recipe for a Saint Patrick’s Day Post and then I remembered what this holiday is all about and I decided to go with a cocktail.  While a Gimlet is not of Irish decent, this version is enhanced with cucumber and rosemary…both of which are green so there you go.  

My neighbor found this recipe after being inspired by Steva Casey to experiment with cocktails at our Pop-Up Dinner.  At the dinner there was much discussion of gin and how it can taste like a Christmas tree or, as my daddy says, pine straw.  Steva told us it is all about the quality of the gin and how lower grade gins are only made with 4 botanicals, but gins such as Bombay Sapphire are infused with 10 different botanicals for a more balanced flavor.  I also used liquid stevia in this recipe to not only cut down on calories but also to avoid having to make a simple syrup.

Cucumber Rosemary Gimlet
2 slices of cucumber
12 fresh rosemary leaves
2 T fresh squeezed lime juice
2 ounces of Bombay Sapphire gin
1/2 dropper of liquid stevia or 1/4 ounce of simple syrup
Ice

Muddle cucumber and rosemary in the bottom of a cocktail shaker.  (While it isn’t pretty, my neighbor and I both like this muddler) Fill shaker with ice and add gin, lime juice and stevia or simple syrup.  Shake well.

Double strain into a glass and float a garnish of fresh rosemary and thin cucumber slices.
