Happy Fourth of July! Sorry I didn’t come up with a more patriotic themed drink for today’s post, but a red, white and blue cocktail just doesn’t do it for me. Maybe it’s a little too “Cash’s Faux Pas*” for my mature taste buds, and speaking of mature, my mature metabolism isn’t so crazy about the thought of sugary drinks either.
This cocktail is made of cucumber juice, lime juice and stevia and is mixed with Cathead Honeysuckle Vodka. It is super fresh and refreshing and not loaded with calories. The hint of honeysuckle from the vodka gives this cocktail a familiar flavor that tastes like summer to this small town girl.
Cucumber Lime Cocktail
2 cucumbers peeled and juiced
1 1/2 ounces of Cathead Honeysuckle Vodka
juice of 1/2 lime
1/2 dropper of liquid stevia
Juice the cucumbers in a juicer or blender. If using a blender, blend until it becomes a thick juice and separate the juice from the pulp by straining through a mesh sieve into a bowl. You will need to press the pulp with a wooden spoon. This will yield enjoy ough cucumber juice for 4 cocktails
Fill a glass with ice cubes, add Cathhead Honeysuckle Vodka, 1/4 of the cucumber juice, lime juice and stevia. Stir to combine and garnish with cucumber and lime slices.
*For those of you who aren’t familiar with Cash’s, it was a night club in Fort Walton Beach, Florida that was rocking in the 80’s and 90’s. Among other things, it was known for bikini contests and a bar a mile long filled with daquaris flowing in bright colors from a wall of frozen cocktail machines. They had a dedicated staff of people slapping bumper stickers on your car that said “Cash’s loves -insert state name here-” that had to be removed before your senior trip caravan hit the state line on the way home. If you live in the South and are in your 40’s I probably saw you there.
